Maybe it was the MSG, maybe it was the buttery soy glaze clinging to the noodles — but that combination of charred udon, sizzling sauce, and rich aroma instantly hooked me.

In a lot of ways, this dish is what sparked my passion for cooking. It’s simple, punchy, and nostalgic — the kind of thing you crave on quiet nights when you just want something that hits right.


🍶 The Flavor Breakdown

These noodles are the ultimate sweet–salty–savory balance. The sauce combines soy sauce, sake, mirin, and dashi powder — the backbone of Japanese flavor — with honey and brown sugar for subtle sweetness and sesame oil for depth.

The ground pork adds richness, while garlic (lots of it) delivers that unmistakable punch. Toss everything in butter and finish it sizzling in a stone bowl, and you get that signature Gyu-Kaku texture — lightly crisped udon at the bottom, glossy noodles on top, and a fragrance that fills the room.

Sauce

  • 30 g soy sauce
  • 15 g sake
  • 15 g mirin
  • 8 g rice vinegar
  • 8 g honey
  • 8 g brown sugar
  • 10 g sesame oil
  • 2 g dashi powder

Garnish

  • 1 stalk green onion, sliced
  • 1 tbsp red bell pepper, diced
  • Toasted sesame seeds

Other

  • 100 g ground pork
  • 6 cloves garlic, minced
  • 150 g udon noodles
  • 2 tbsp butter

Instructions

  1. Prepare the Sauce & Garnish
    Combine all sauce ingredients in a bowl. Set aside your green onions, red bell pepper, and sesame seeds for garnish.
  2. Cook the Pork & Garlic
    In a pan over medium heat, melt the butter and add ground pork. Cook until browned and slightly crispy, then add the minced garlic. Sauté for 30 seconds until fragrant.
  3. Cook the Noodles
    In a separate pot, boil the udon noodles according to package instructions. Drain well.
  4. Combine & Coat
    Add the cooked noodles to the pan with the pork and pour in the sauce mixture. Turn the heat to low and toss until everything is evenly coated and glossy.
  5. Optional: Stone Bowl Finish
    For that Gyu-Kaku flair, heat a stone bowl over the stove until scorching hot. Add the noodles and listen for that satisfying sizzle.
  6. Garnish & Serve
    Top with green onion, red bell pepper, and sesame seeds. Serve immediately.
