  • Burger Patties (2 per Burger)
  • 340 g 340 ground beef (use your favorite mix or my burger blend recipe)

  • 4 slices 4 smoked gouda

  • Salt & black pepper

  • Neutral oil for cooking

  • Cheese Sauce (Make Ahead Friendly)
  • 14 g 14 (1 tbsp) unsalted butter

  • 8 g 8 (1 tbsp) all-purpose flour

  • 240 g 240 (1 cup) whole milk

  • 10 g 10 smoked gouda

  • 10 g 10 parmesan, grated

  • 20 g 20 cheddar, grated

  • Pinch salt, white/black pepper, and cayenne

  • Cheese Crisp
  • 30 g 30 parmesan, grated

  • 10 g 10 gruyère, grated

  • Brioche dough (from my brioche bun recipe)

  • 40 g 40 cheddar, grated

  • Make the Cheese Burger Buns
  • After Step 6 of my brioche recipe, knead in 40g cheddar.
  • Proceed with proofing and baking.
  • Before baking, brush with egg wash and sprinkle cheddar on top.
  • Once cooled, slice and toast cut sides in butter before serving.
  • Make the Cheese Crisp
  • Heat a non-stick pan over medium-low heat.
  • Add half the grated cheeses in a circular mound (use a mold for clean edges).
  • Melt until crispy but not browned (the taste can be bitter if browned).
  • Remove and place on paper towels.
  • Repeat with the remaining cheese.
  • Cook the Patties
  • Form beef into 85g balls (2 per burger).
  • Heat a cast iron skillet with 1–2 tbsp neutral oil over high heat.
  • Smash each ball into the pan with a spatula and parchment.
  • Season with salt and pepper.
