Ingredients

  • 2 cups 2 rice, washed and drained

  • 2 2 ½ cups seasoned chicken stock

  • 1 1 chicken breast, skin-on

  • 1 1 chicken leg

  • 0.5 0.5 inch ginger, roughly chopped

  • 2 cloves 2 garlic, roughly chopped

  • 2 2 scallion whites, smashed or chopped

  • 1 1 cucumber, sliced (for serving)

  • 2 Tbsp 2 sweet chili sauce or ginger-scallion sauce (for dipping)

  • 1 tsp 1 sesame oil

  • Salt and white pepper, to taste

Directions

  • Wash your rice until the water runs clear. Let it soak for 10 minutes, then drain.
  • Add the drained rice, chicken stock, ginger, garlic, scallion whites, and a pinch of salt and white pepper to the rice cooker. Stir to distribute.
  • Place the chicken breast and leg directly on top of the rice.
  • Close the lid and set the rice cooker to the standard cook setting. Let it complete its cycle (about 30–40 minutes depending on your model).
  • Once the rice cooker is done, let everything sit for 10 minutes before opening the lid. Remove the chicken, slice it, and drizzle with sesame oil.
  • Plate the rice with sliced chicken and fresh cucumber. Serve with sweet chili sauce or ginger scallion sauce on the side.
