If you love bold flavors, rich sauces, and chewy textures, this Gochujang Bolognese Tteokbokki is the dish for you. It’s a fusion of Korean-Italian cuisines that combines the slow-simmered depth of traditional Italian bolognese with the spicy, umami-rich punch of gochujang and Korean rice cakes (tteok). The result? A deeply comforting meal that brings together the best of both culinary worlds.

Italian cuisine is known for its versatility—simple ingredients, slow-cooked sauces, and rich foundations that work beautifully with other global flavors. That’s exactly why it’s a perfect canvas for fusion cooking. In this dish, chewy Korean tteok is coated in a meaty gochujang bolognese packed with aromatics, wine, tomato, and Korean chili heat. Whether you’re a fan of tteokbokki or a lover of bolognese, this spicy, saucy mash-up will win you over.

🔥 Tips for the Best Gochujang Bolognese Tteokbokki

  • Use high-quality gochujang for maximum umami and depth – try to avoid ones loaded with flavorings and sweeteners like corn syrup
  • Simmer the sauce low and slow—time builds flavor (it’s even better the next day)
  • Don’t overcook the tteok—you want them soft but still chewy
  • Leftover sauce? Use it on pasta, polenta, or in a sandwich
  • Add scallions or fresh herbs to brighten the final dish

🌟 Why You’ll Love Gochujang Bolognese Tteokbokki

  • A unique fusion of Korean spice and Italian richness
  • Chewy tteok soaks up the meaty, umami-loaded sauce
  • Perfect for cozy nights in, dinner parties, or leftovers that taste even better the next day
  • Versatile: works with pasta, polenta, or even bread if you don’t have rice cakes
  • Big comfort food energy with a bold twist

Ingredients

  • Gochujang Bolognese
  • 1 lb 1 ground beef

  • 1 lb 1 ground pork

  • 2 2 onions, minced

  • 1 1 carrot, minced

  • 1 1 stick celery, minced

  • 1 bulb 1 garlic, minced

  • 2 tbsp 2 olive oil

  • 1 tbsp 1 tomato paste

  • 3 tbsp 3 gochujang (Korean chili paste)

  • 1 tbsp 1 gochugaru (Korean chili flakes)

  • 1 bottle 1 red wine

  • 1 bottle 1 (710 mL) tomato passata

  • 4 sprigs 4 thyme

  • 1 1 bay leaf

  • Salt and black pepper, to taste

  • Other
  • Korean rice cakes (tteok)

  • Butter

Directions

  • Brown the Meat
  • In a skillet over medium-high heat, cook the ground beef and pork until browned and slightly crispy. Drain excess fat if needed, then set aside.
  • Make the Soffritto
  • In a large Dutch oven or heavy pot, heat olive oil and gently cook the onions, carrot, and celery over medium heat until soft and translucent, about 5-7 minutes.
  • Add Garlic & Spice
  • Stir in the minced garlic and sauté for another minute. Then add tomato paste, gochujang, and gochugaru. Cook for 2–3 minutes until the mixture darkens and becomes fragrant.
  • Deglaze with Wine
  • Return the browned meat to the pot. Pour in the red wine and let it simmer until reduced by about 90%, leaving a rich, concentrated base. This will take about 30-45 minutes.
  • Add Tomatoes and Herbs
  • Stir in the tomato passata, then add thyme sprigs and bay leaf. Lower the heat and simmer the sauce uncovered for about 2 hours, stirring occasionally.
  • Season to Taste
  • Season the sauce with salt and black pepper. Remove the thyme and bay leaf before serving.
  • Cook Rice Cakes & Assemble
  • Boil the Korean rice cakes in water for about 2 minutes until softened. Drain well.
  • Toss the cooked tteok into the bolognese sauce with a pad of butter. Garnish with chopped herbs or even a sprinkle of Parmesan for a bold fusion finish.
