Ingredients

  • Main Ingredients
  • 10 10 shrimp, peeled and deveined

  • 0.25 0.25 onion, julienned

  • 0.5 0.5 shallot, finely diced

  • 1 1 garlic clove, minced

  • 4 4 stems Chinese broccoli (gai lan), chopped

  • 2 cups 2 cooked day-old rice

  • 2 2 eggs

  • Salt, to taste

  • Thai basil, chiffonade (for garnish)

  • Tom Yum Sauce
  • 2 Tbsp 2 tom yum paste

  • 1 Tbsp 1 lemongrass (white part, finely chopped)

  • 1 Tbsp 1 fish sauce

  • 1 tsp 1 lime juice

  • 1 Tbsp 1 sugar

Directions

  • Make the Tom Yum Sauce
  • In a small bowl, mix tom yum paste, lemongrass, fish sauce, lime juice, and sugar. Set aside.
  • *Cook the shrimp*
  • Heat a wok or large skillet over medium-high. Add a bit of oil and cook shrimp until pink and just cooked through. Remove and set aside.
