  • 60 g 60 parmesan cheese, grated

  • Neutral oil, for frying

Directions

  • Boil the potatoes
  • Peel and chop potatoes, then boil until fork-tender. Drain and pass through a ricer or mash until smooth.
  • Mix and Shape the dough
  • While the mashed potatoes are still warm, mix in cornstarch, parmesan, mozzarella, salt, and any other desired seasonings. Mix until a soft dough forms.
